The are two racks (top and bottom). There is no container for chips because you're supposed to place chips directly of lava stones.

There are two racks. You can cook quite a bit of food. I do a large turkey AND ham every year at Thanksgiving. There is one water pan, but no chip box. You can purchase one separately, but I just soak the chips and throw them in the bottom. Works great.

there are 2 racks, each rack will easily hold 2 whole chickens. The water goes in a large bowl which is included.. the wood CHUNKS go in the bottom pan on top of the lava rock. You dont want to use chips.

The unit comes with a 1500 watt element which sits in the base pan above the lava rocks. The base pan heats up the body or can be used as a waist high grill when stationed on top of it.

The heating element is to be used for both the grill and the smoker configurations. This product is not for charcoal as there is a hole in the base for the power cord. Charcoal embers could fall through that opening.

The heating element, which both provides the heat and causes the wood to smoke, is electric. So in the bottom you have the electric heating element, then the water/drip pan, then the first grate and finally the last grate.

The smoker is heated by and electric heating element in the bottom. Above the heating element is a water dish, then the lower rack for meat and then an upper rack for meat. You can however remove the whole center section of the smoker and put one of the grills on the bottom above the heating element and use as a grill.

It is converted from a smoker to a grill by moving the electric burner section (the whole bottom section) from the bottom of the unit, to the top of the unit, just under the lid.

The smoker consists of a bottom burner pan with an electric heating element. On top of that goes the body with two racks then a domed top. The burner pan is a combination burner and smoker. The chips go right into the burner pan to make the smoke. This is pretty common on electric smokers. some have a separate chip holder and some have an adjustable heating element. This one does not. It's a bare bones smoker, but it does the job especially for the money.

No, but you can fill the water bowl up with a lot of water and even ICE to regulate cooking temp. As long as you don't cook on a 100 degree day you'll be ok.

The unit does not have a heat control. None needed if installed correctly, it stays at about 250 degrees but make sure the heating element is on top of the lava rock.

No. It plugs directly into the 110 receptacle. No adjustment, but read my review it's not really necessary if you follow my guides

It's a serious deficiency, but it keeps the cost down.

Unfortunately not, but I have yet to overcook anything or burn it. The drawback is in the grill function. That's where heat control would really be useful. Still, I use the grill all the time (tonight, in fact, I'll be using it to make chicken satay) and though it takes longer to cook than a charcoal grill, it works fine.

You would use the water pan when cooking for long periods of time. It prevents your ribs, roasts, birds from turning into jerky. A manual is included that gives details on how long to cook a variety of items, and if you need to use water.

The water pan is used to keep moisture in what you are cooking. I use it everytime. It's not necessary for everything, but most of the drippings from fat will land in the water and that makes it a lot easier on the cleaning crew. Much better than burned on fat.

As stated in the manual wood chunks or sticks 3" to 4" long and 2" to 1" thick work best. Unless
the wood is still green, soak the wood in water for 20 minutes or wrap each piece in foil and tear several small holes in the foil to produce more smoke and prevent the wood from burning too quickly. A lot of wood is not required to obtain a good smoke flavor. A recommended amount is 3-4 wood chunks or sticks. Additional flavoring wood should not have to be added during the cooking process, however, it may be necessary when cooking very large pieces of meat. Follow the instructions and cautions in the manual to avoid injury while adding wood.

You can use wood chips or larger chunks. If you soak the wood, it'll last much longer. Also, the larger chunks last pretty much the whole smoking time. I don't like too much smoke flavor, so I just put 2 larger chunks of wood on lava stone (not on heating element) and they last about 8 hours.

That's a good question. There are a lot of variables. How much smoke do you want. What kind of smoking are you doing. What kind of wood are you using.How much are you putting in.Two cups of medium size hickory chips soaked for 30 minutes in water prior to putting in will last about forty minutes. Hickory produces a harsh smoke and forty minutes of smoke would give a side of ribs a mild smoky flavor. Replenish once and the flavor will increase. Chunks will last longer than chips. Depending upon the outside temperature, In 90 degrees you will probably take four hours for the meat to cook. Cooler outside temperatures will take longer. If you use cherry or apple, the smoky flavor is different and a little milder than hickory. I don't smoke during the entire cooking time, just at the start and usually one refill. I use apple mostly ,but the harsher smoke is good on pork and not on fish to my taste. Watch your cooking temp. i insulated the outside of the unit and my temperatures are somewhat hotter than an uninsulated smoker.

Only every couple of hours if you (1) use larger wood chunks instead of chips and (2) you presoak them for an hour or so before you put them in. Both chunks and chips are generally available and you can presoak them while you are getting the meat and other things ready. I also like to put some liquid smoke and/or apple or other juice in the water plan. It's an easy way to add a little extra flavoring, if you want.

I usually add wood chips once every 2-3hrs or so... wood chunks last much longer and if you soak them in water for 15-20mins prior to smoking, they wont catch fire and burn up quickly.

The door is about 5inches by 8. pretty useless. You can smell if the wood is still smoking so there is no need to look in through the door. I ran mine for almost 8 hours and still had half the water pan left. not that you could fill it through the door anyway.

I don't believe so, at least that I have seen. Mine came with information on how to reorder one (as well as racks and water pans) from Brinkman. I had one of these smokers years ago and had it for several years with no issues (had to get rid of it when I moved, otherwise I'd still have it). The one I have now is still working well.

No, it does not. I recommend buying a temperature gauge you can place in the unit while it is being used, that has a wired external display that can be placed outside the unit. Any type of drilling into the smoker body itself would likely increase chances of rusting.

No.At least not on the one I bought.

I use a standard meat thermometer in a small hole drilled into the lid. The temperature is greater on the lower part. The unit couldn't get up past 220, so I put some pipe insulation from Home Depot around the bottom, now It can get up to 350 easily. You can also get a bolt on replacement thermometer from Brinkeman that they use on their other products

As advertised this unit does not come with a heat thermometer. The unit however does come with a 1500 watt heating element which can reach temperatures between 200 to 250. Now to reach these temperatures would consists of how well the unit is isolated from cold weather,strong winds and having it plugged directly into an outside outlet without the use of an extension cord.

No external gauge needed. Some good thermometers have cooking times on them so keep time on your watch....plus 15minutes for the initial warm up period.

The lava rocks help distribute and hold the heat. While the setup of the electric element would allow for decent distribution of heat, the lava rocks simply do it better. Also, if for any reason you must remove the top pieces, such as adding wood chips or water, the lava rocks or sand would retain the heat much better than without.

The lava or sand or cement bbq rocks. Is used for for many reasons.

Drips will hit the lava rocks and not just the heating element directly. Same as your BBQ using java or cement BBQ bricks

second is to even out the heat. Also lava rocks don't conduct heat you avoid hot-spots from the red hot heating element and if java rocks cover the element slightly you can lower the over all temp, and cook at a slower heat for a longer period of time.

It disperses and holds the heat for a more uniform temperature. And yes, you do need it. When I bought my electric smoker it was a floor model, the last in the store. I did not know anything about lava rocks, and mine did not have any included. I could not figure out why I couldn't get the smoker hot enough... after an hour the pack of wood chips were not smoking. I thought the element was bad..but I Googled and found that I was missing the lava rocks. I bought some from a garden center and now everything works fine.

Yes you can removed the heating element easily and put in charcoal instead. I would suggest that you use aluminum foil to line the bottom. You will still scorch the paint, but not as much.

You could use charcoal with a few modifications.

No vent holes to control the heat in the lid or the side for combustion aire.
You could open the door a bit for heat control.
Then drill some holes in the to side of the bottom pan on both size 6 to 6 1/4 inches holes to get air over your coals.

Yes, you can take the electric element out very easily.. and I do not see why you could not use charcoal in the base..just replace the lava rock with your charcoal. There will be a hole, about 1 1/2" diameter where the heating element cord comes out.. should be good for air control, might have to attach a piece of tin or aluminum, cut a little circle out of a beer can and fix it so you can open or close the hole as needed. And get a heat thermometer.. this grill does not have one in the lid

Yes, the heating element is easily removed. Also, when I go my smoker - there were different instructions in the booklet for a charcoal model. But I am not sure if it's convenient to use with charcoal because the door is kind of on a small side. And you'll have to literally get down on the floor since the door is positioned so low. My understanding is that this smoker has to stay on the ground. But his smoker works perfectly with heating element and the cooking time is much shorter. Hope this helps.

The unit uses a 1500 watt element which normally can reach a temperature of 300 degrees under normal conditions. The electric smoker does a very good job of smoking meat as designed. With meat in the smoker and water in the water pan, the smoking temperature is about perfect. The temperature can vary quite a bit depending on outdoor conditions (temperature, in the sun, wind, etc.).

If you're asking about surface temperature, very hot. Be careful and keep kids away. If you're asking about cooking temperature, it's about the same as your oven, 250-350 or so depending on how often and how long you have the lid off. It will cook most things in about the same time as in your oven. The important thing is to always use a meat thermometer to make sure things are adequately done! The great thing about this smoker/cooker is that, as long as you keep water in the water pan, it's hard to overcook things. If in doubt, just leave it in a little longer and recheck the temperature to make sure it's done!

For this electric unit wood chips can be used inside the lava rock pan. These need to be spread around the element or if you have a smoker box then place it on top of the element.

By all means, pre=wet the chips and put them right next to the burner on the bottom. I never use charcoal since I don't want smoke the whole time. Keep the chips away from the electric element.

Please use the following steps for grilling with this unit.

1. Remove dome lid and smoker body from base pan.

2. Place a cooking grill on the base pan.

3. Place food on the cooking grill in a single layer with space between
each piece.

4. Place dome lid on base pan and plug the grill into electric outlet.
For best results, the dome lid should be placed on base pan when
grilling food.

WARNING: Always use a 3-wire grounded outlet wired for 120 volts
which is GFCI protected at 15 or 20 amps. If in doubt, contact
a qualified electrician. Do not operate this grill with any other
appliance or electrical device on the same circuit.

5. Always use a meat thermometer to ensure food is fully cooked before
removing from smoker.

WARNING: When grilling, drippings from meat may cause flame flare-up.
Use extreme caution when removing the dome lid. Lift dome
lid by tilting it toward you to allow heat and flame to escape
away from your face. If flame flare-ups occur, replace the
dome lid and unplug the grill to smother flame. Do not use
water to extinguish a grease fire.

6. After cooking, always unplug the grill from electric outlet. Allow grill to
cool completely, then follow instructions in the “After-Use Safety and
Proper Care & Maintenance” sections of the owner's manual.

The middle body needs to be taken off and the grid put right above the burner. This smoker does not have any type of grill adjustment and I have found that the burner is not really nearly hot enough for the upper grid and not really that hot for the lower. I made a three part support out of crumpled up aluminum foil that holds the grid about two inches above the burner. I put the made up legs on the burner pan to hold the grid. I sort of bent the wad of foil around the lip of the burner pan. That worked fine for grilling at least for me.

if you are using it as a grill. the grill grate should be put just above element. the middle part of the grill should come off so it's just the top put over the base. caution, you'll get some grease on the element. otherwise your meat will take a long time to cook.

If you lift the smoker body to allow more air into the smoker, the temperature will drop. You would have to use some type of spacer (bricks, etc.).

No way to regulate the temps other then lowering your pan water temps. I do salmon all the time takes approx. 2 hours or less just until flakes easily.

There are many models that do have adjustable temperature settings. However, the model I have the gourmet by brinkmen is not adjustable. Mine is the 79.00 model. The adjustable temperature models will cost you significantly more. The next one up from mine was 179.00. I just wasn't sure if I would use a smoker enough to justify the extra cost.

I use wood chips. I bought several small aluminum loaf pans & I fill them with the wood chips. I cover them with foil & cut slits in the foil. I then place them in the smoker next to the heating coil. I use three at a time. Plug in the power & allow the smoker to come up to temp & the chips start smoking. Then place your meet on the racks. if I need more smoke during the smoking process I open the side door & remove the pans with my tongs & replace them with more loaded pans. This allows for you to have smoke thru-out the whole process.

What about placing heavy alum foil under fish and offsetting the lid an inch or two during smoking to let our more heat, less convection? Not sure the target temp on that. 175-200?

no temp control. The element will get the smoker to 200F give or take depending on the outside temperature . fill the water bowl with cold water and use more lava rocks to drop the over all temperature down. Even at 180f that is slow cooking as well..

No, it cannot. The unit has one setting, on or off. You will have to get creative to control the temperature. Two different heating elements on my unit would not go above 150 degrees, so for fish you may be in luck.

You can use this unit for smoking Jerky but will need to monitor the temperature consistently. If you let it reach above 150 then your meat will burn instead of drying out. Always keep the water pan full during the cooking process.
