Alright I bought a Sante Fe grill, I also picked up a Char-Broil grill cover (fits perfect) and a can of grill paint (in case any rust pops up). Tha ability to raise and lower the (manufacture replaceable) charcoal pan allows me to manage the amount of coals and heat I need for my BBQ's. The built in thermometer is great, "ideal" is the temp your looking for, I also use a meat thermometer to check for doneness. The four air vents are great as well as the front door for adding wood chips or extra coals. Heres what I did for my first BBQ; loaded a bag of charcoal on the right side left all doors, vents and lid open. As soon as I saw some white ash, put the grill on and began searing my meats. Once I had a nice char, moved them over to the left side where there was no flame, shut the lid and let them slow cook. Excellent ribs, chicken, sausage, and hotdogs with almost no effort. I love my Char-Broil Sante-Fe!
